Servings size (~3 person)
Ingredients:
- 1 Cup Broccoli florets
- 3-4 Enoki Mushroom
- 1 Shallot cut in large pieces
- 4-5 Garlic cloves (unpeeled and smashed )
- Basil (1 teaspoon)
- Parsley (1 teaspoon)
- 2 teaspoon of black pepper
- Croutons (optional)
- Salt as per taste
- Butter (1/2-1 inch)
- Avocado oil 2 tablespoon
- 2 Tablespoon Sour cream
- 1-2 Cup water
Preheat Oven at 400℉
- Place an aluminium foil on a baking tray and put broccoli, shallots, mushroom, garlic, parsley, basil, salt.
- Spray avocado oil and bake at 400℉ for ~20 minutes.
- Once baked, put all ingredients in the blender and make a puree. Water can be added as per requirement,
- Melt butter in a pan and add the puree.
- Add sour cream and cook till the puree boils.
Serve it hot with croutons!
